๐Ÿง‚ Ingredients:

Boiled potatoes (mashed)1 medium
Cucumber (thinly sliced)1
Tomato (thinly sliced)1
Onion (thinly sliced)1
Carrot (grated)1/2 cup
Boiled green beans (chopped)1/4 cup
Capsicum (finely chopped)1/4 cup
Butter2 tablespoons
Green chutney (coriander-mint)2–3 tablespoons
Black pepper powder1/4 teaspoon
Chaat masala1/2 teaspoon
SaltAs per taste
Cheese slices (optional)2–3 slices

๐Ÿ”ช Instructions:

1. Prepare the Ingredients:

  • Boil and mash the potatoes.

  • Grate or finely chop the remaining vegetables.

  • Slice the bread edges if preferred.

  • Keep green chutney and butter ready.

2. Make the Veg Filling:

  • In a bowl, mix mashed potatoes, grated carrot, green beans, and capsicum.

  • Add salt, black pepper, and chaat masala.

  • Mix well to form a smooth vegetable spread.

3. Assemble the Sandwich:

  • Spread butter on one side of each bread slice.

  • On top of the butter, apply green chutney.

  • Spread a generous layer of the vegetable filling.

  • Place cucumber, tomato, and onion slices over it.

  • Add a slice of cheese if using.

  • Cover with another slice of bread (also buttered and chutney on the inside).

4. To Toast or Not (Optional):

  • For a toasted sandwich, grill or toast in a sandwich toaster or on a tawa (pan) until golden and crisp.

  • You can also serve them cold (without toasting) for a refreshing bite.

5. Serve:

  • Cut the sandwiches into halves or triangles.

  • Serve with ketchup and extra green chutney on the side.

  • Add mayonnaise or sandwich spread for a creamy texture.

  • You can add lettuce or spinach for extra crunch and nutrition.

  • Sprinkle some chili flakes or oregano for an Italian twist.
