๐Ÿ”ช Preparation Steps:

1. Clean and Prepare the Chicken:

  • Wash and pat dry the chicken completely.

  • Gently loosen the skin over the breast with fingers to allow seasoning underneath.

  • Prick the thick parts with a fork for deeper flavor penetration.

2. Make the Marinade:

In a bowl, mix together:

  • Garlic, yogurt, lemon juice, olive oil (or butter)

  • Salt, pepper, chili powder, turmeric, cumin, coriander, and dried herbs.

3. Marinate the Chicken:

  • Rub the marinade all over the chicken, under the skin, and inside the cavity.

  • Stuff the cavity with halved lemon and fresh herbs.

  • Cover and refrigerate for at least 4 hours or overnight.

4. Prepare for Roasting:

  • Preheat the oven to 200°C (400°F).

  • Arrange a bed of vegetables (onion, carrots, potatoes) in a baking tray.

  • Place the chicken on top of the veggies — breast side up.

5. Roasting:

  • Roast in the preheated oven for 1 hour to 1 hour 15 minutes.

  • Baste the chicken with its own juices or melted butter every 20–30 minutes.

  • To check doneness: Insert a thermometer into the thickest part of the thigh — it should read 75°C (165°F).

  • Let it rest for 10–15 minutes before carving.

  • Serve with roasted veggies, garlic bread, mashed potatoes, or rice.

  • Drizzle leftover juices as a natural gravy.
